Italian Shrimp (Scampi Italiano) Recipe
The italian shrimp or scampi italiano is a peppy and savory shrimp recipe made with large shrimps. Seasoned with a spicy mix of garlic with parsley and pimiento, the italian shrimp is skillet cooked till tender. Finished with some lemon juice and butter, i love these zesty shrimps with rice or pastas. they definately add a start to the meal.
Ingredients
| 1/2 cup olive or other cooking oil | ||
| Salt | 3/4 Teaspoon | |
| Black pepper | 1/4 Teaspoon | |
| Garlic powder | 1/2 Teaspoon | |
| Parsley | 1/4 Cup (16 tbs), minced | |
| 1 whole pimento, mashed | ||
| Large shrimp | 2 Pound, deveined | |
| Butter/Margarine | 3 Tablespoon | |
| Lemon juice | 3 Tablespoon | |
Directions
Mix oil, salt, pepper, garlic powder, parsley, and pimento.
Dip shrimp in mixture and cook in a hot skillet over low heat about 2 minutes on each side.
Spoon 2 or 3 tablespoons of the oil mixture over shrimp; cover and cook until tender (5 to 8 minutes), turning once.
Transfer shrimp to a serving dish.
Add butter and lemon juice to the skillet; stir and heat until mixture begins to sizzle.
Pour over shrimp and serve hot.
