Italian Sausage Soup Recipe

Ingredients

 
1 to 1 1/2 lb. sweet Italian link sausage, cut into 1 inch pieces
 
2 cloves garlic, minced
 
2 medium onions, chopped
 
1 can (28 oz.) whole tomatoes, mashed
 
2 cans (14 oz. each) beef broth
 
1 teaspoon leaf basil
 
1/2 teaspoon leaf oregano
 
1 tablespoon chopped parsley
 
1 medium green pepper, seeded and chopped
 
2 zucchini, thinly sliced
 
1 to 2 cups water
 
Grated Parmesan cheese

Directions

In skillet, brown sausage; drain well.
Add all ingredients except parmesan cheese to crock pot; stir well.
Cover and cook on low setting for 12 to 14 hours.
Taste for seasoning; serve sprinkled with cheese.
