Ingredients

 
Vegetables (carrots, onions, celery) - 1 cup, finely diced
 
Spinach - 1 cup, finely shredded
 
Water - 4 pints
 
Rice – 5 ½ ounce
 
Cheese - 3 tablespoons, grated
 
Butter - 1 tablespoon
 
Salt – as per taste
 
Vegetable oil - 1 ounce

Directions

MAKING
1. In a pan, heat oil.
2. Add diced vegetables and sauté it till it turns light brown in colour.
3. Add spinach. Stew till juice gets condensed.
4. Add rice, water and salt. Cook for 20 minutes.

SERVING
5. To serve, take butter in tureen and pour Italian Rice Soup over it. Top it with grated cheese.
