Italian Potato Puff Recipe
Ingredients
1 small green pepper, seeded and chopped (1/2 cup)
1 medium-size onion, chopped (1/2 cup)
3 tablespoons butter or margarine
4 cups prepared instant mashed potatoes
2 tablespoons seasoned dry bread crumbs
1 package (8 ounces) mozzarella cheese, thinly sliced
Directions
Saute green pepper and onion in 2 table-spoons of the butter or margarine until soft in a small skillet.
Stir into mashed potatoes in a medium-size bowl.
Grease a 6-cup round baking dish evenly with the remaining 1 tablespoon butter or margarine.
Sprinkle with bread crumbs, making sure to cover inside of dish completely.
Layer potatoes and cheese in dish, beginning and ending with potatoes.
Bake in moderate oven (350°) for 30 minutes, or until potatoes are slightly golden.
Turn out onto warm serving dish, shaking gently to loos-en.
Serve at once.
