Italian Poached Fish Recipe

Ingredients
2 tablespoons chopped parsley
1 clove garlic, pressed or finely chopped
1 to 1 1/2 tablespoons olive oil
1/4 cup hot water
1 pound white fish fillets, fresh or frozen defrosted
1/8 teaspoon oregano leaves
Salt and pepper to taste
Directions
Place parsley, garlic, olive oil and water in baking dish.
Microwave 30 seconds on HIGH.
Arrange fillets with thickest portions to outside of dish.
Sprinkle with seasonings.
Cover tightly with plastic wrap.
Microwave 5 to 6 minutes on HIGH, or until fish flakes easily.
Let stand 2 minutes, covered.
Serve with liquid.
Note: Over-cooking toughens fish.
