1/3 cup chopped onion
2 large cloves garlic, chopped
1/2 green pepper, cut in 1 inch strips
1 tablespoon water
1 can (15 ounces) no salt tomato sauce
3 tablespoons honey
1 teaspoon crushed dried oregano
1 teaspoon crushed dried basil
meat balls preparation:
1 pound ground turkey breast meat
1/3 cup chopped onion
1/4 cup finely chopped celery
2 cloves garlic, chopped
1/2 teaspoon crushed dried oregano
1/4 teaspoon crushed dried basil
1/2 cup fat-free crackers, processed to fine crumbs
3/4 cup cooked brown rice
2 egg whites
dash of white pepper (optional)
Directions
1. Combine sauce ingredients in large skillet, bring to a boil and simmer gently, uncovered for 5-10 minutes to blend flavors.
2. Combine meatball ingredients and shape each into 1 inch balls.
3. Place immediately into simmering sauce.
4. Cover partially and simmer gently for 15-20 minutes, until meat is no longer pink inside, turning meatballs during cooking until evenly browned.
