Ingredients

 
2 lbs whole milk ricotta cheese
 
2/3 cup super fine sugar
 
1/3 cup all purpose flour
 
6 eggs
 
2 tsp vanilla
 
zest from two lemons
 
juice from 1 lemon
 
1 tsp salt
 
a buttered and floured 9.5 inch springform pan

Directions

beat ricotta until smooth, add sugar and flour, vanilla, salt, lemon zest and juice and beat.
add eggs, one at a time and beat until smooth
pour into prepared pan and bake on middle rack in oven at 300 F for 1.5-1.75 hours or until set. Cool on a wire rack. Remove
from pan and chill. Dust with confectioners sugar and serve.
( a fresh berry puree is a nice addition to this as a sauce)

Interesting, big difference to Cordon Bleu Cheesecake which requires cream cheese/ Formage Blanc and is two stage baking-no flour. I always knew NY Cheesecake was different.
