Ingredients

2 lbs whole milk ricotta cheese
2/3 cup super fine sugar
1/3 cup all purpose flour
6 eggs
2 tsp vanilla
zest from two lemons
juice from 1 lemon
1 tsp salt
a buttered and floured 9.5 inch springform pan

How to make Italian Cheesecake

beat ricotta until smooth, add sugar and flour, vanilla, salt, lemon zest and juice and beat.
add eggs, one at a time and beat until smooth
pour into prepared pan and bake on middle rack in oven at 300 F for 1.5-1.75 hours or until set. Cool on a wire rack. Remove
from pan and chill. Dust with confectioners sugar and serve.
( a fresh berry puree is a nice addition to this as a sauce)

Interesting, big difference to Cordon Bleu Cheesecake which requires cream cheese/ Formage Blanc and is two stage baking-no flour.

I always knew NY Cheesecake was different.
