Italian Bean Salad Recipe
Ingredients
| Cannellini | 2 Can (10oz), drained | |
| 1 jar (2 ounces) diced pimiento, drained | ||
| Green pepper | 1 Large, chopped | |
| Onion | 1 Medium, chopped | |
| Snipped parsley | 1/4 Cup (16 tbs) | |
| 1/4 cup olive or vegetable oil | ||
| Lemon juice | 2 Tablespoon | |
| Capers | 2 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| 1/4 teaspoon red pepper sauce | ||
| Lettuce leaves | ||
| Water | 1 Can (10oz), drained | |
Directions
Mix beans, pimiento, green pepper, onion and parsley.
Shake oil, lemon juice, capers, salt and pepper sauce in tightly covered container; toss with bean mixture.
Spoon bean mixture on lettuce; top with tuna.
Serve with lemon wedges if desired.
