Italian Style Vegetable Soup Recipe

Ingredients

 
3 tablespoons olive oil
 
1 medium-sized onion, chopped
 
1 clove garlic, finely chopped
 
1 quart homemade vegetable or chicken broth
 
2 large plum tomatoes, peeled and chopped
 
1/3 cap raw brown rice
 
Salt
 
1 medium-sized zucchini, washed and sliced
 
1 medium-sized potato, peeled and cubed
 
Freshly grated Parmesan or Romano cheese

Directions

1. Heat the oil in a kettle and saute the onion and garlic until tender but not browned. Add the broth, tomatoes, rice, and salt to taste. Bring to a boil, cover, and simmer for 20 minutes.
2. Add the zucchini and potato and cook for 20 minutes longer, or until the rice is tender.
