Italian Style Squab Recipe

 Squab4 Ounce
 All purpose flour1⁄4 Cup (4 tbs)
 Salt1 1⁄2 Teaspoon
 Cooking oil2 Tablespoon
 Tomatoes1 Ounce, can
 Onions2 Medium, sliced
 Green pepper1 , sliced
 Sliced mushrooms1 Ounce, can
 Parsley sprigs4 Small
 Garlic1 Clove (5 gm), minced
 Bay leaf1


Cut squab in quarters.
In plastic bag combine flour and salt.
Add 2 or 3 squab pieces at a time; shake to coat.
In large skillet brown squab pieces in hot oil.
Add undrained tomatoes, onions, green pepper, undrained mushrooms, parsley, garlic, and bay leaf.
Cook, covered, over low heat till tender, about 35 minutes.
Uncover; cook 10 to 15 minutes more.
Remove parsley and bay leaf.
