 Olive oil1 Tablespoon
 Garlic1 Clove (5gm), minced
 Rice grain3/4 Cup (16 tbs)
 Chicken broth1 14 1/2 Ounce
 Medium shrimp12 Ounce, deveined
 1 14 1/2-oz. can Italian-style stewed tomatoes
 1 medium zucchini, halved lengthwise and thinly sliced
 Green onions1/4 Cup (16 tbs), thinly sliced
 2 Tbsp. snipped fresh basil or 1 tsp. dried basil, crushed
 1/4 cup shredded mozzarella cheese or finely shredded
 Parmesan cheese (1 oz.)

Directions

1. In a large skillet heat oil; add garlic and rice. Cook and stir 2 minutes. Carefully add broth. Bring to boiling; reduce heat. Simmer, covered, 15 minutes or till rice is tender and water is absorbed. Stir in shrimp, tomatoes, zucchini, onions, basil, and 1/8 teaspoon pepper. Return to boiling; reduce heat. Cook, covered, 2 to 3 minutes or till shrimp turn pink. Remove from heat. Sprinkle with cheese. Cover and let stand 2 minutes.
