Italian Style Shrimp and Rice Recipe
Ingredients
| Olive oil | 1 Tablespoon | |
| Garlic | 1 Clove (5gm), minced | |
| Rice grain | 3/4 Cup (16 tbs) | |
| Chicken broth | 1 14 1/2 Ounce | |
| Medium shrimp | 12 Ounce, deveined | |
| 1 14 1/2-oz. can Italian-style stewed tomatoes | ||
| 1 medium zucchini, halved lengthwise and thinly sliced | ||
| Green onions | 1/4 Cup (16 tbs), thinly sliced | |
| 2 Tbsp. snipped fresh basil or 1 tsp. dried basil, crushed | ||
| 1/4 cup shredded mozzarella cheese or finely shredded | ||
| Parmesan cheese (1 oz.) | ||
Directions
1. In a large skillet heat oil; add garlic and rice. Cook and stir 2 minutes. Carefully add broth. Bring to boiling; reduce heat. Simmer, covered, 15 minutes or till rice is tender and water is absorbed. Stir in shrimp, tomatoes, zucchini, onions, basil, and 1/8 teaspoon pepper. Return to boiling; reduce heat. Cook, covered, 2 to 3 minutes or till shrimp turn pink. Remove from heat. Sprinkle with cheese. Cover and let stand 2 minutes.
