Italian Style Shrimp Recipe

Ingredients

 
1/2 cup olive or salad oil
 
1/2 teaspoon salt
 
1/4 teaspoon freshly ground black pepper
 
2 tablespoons finely chopped parsley
 
2 pounds large shrimp, shelled and deveined
 
1/4 cup butter
 
Juice of 1 lemon

Directions

1. Mix the oil, salt, pepper and parsley. Dip the shrimp in this mixture, then place in a preheated broiler about two inches from the source of heat. Broil two minutes on each side.
2. Place the broiled shrimp in a baking dish, sprinkle with four tablespoons of the oil mixture and bake in a hot oven (450° F.) ten minutes. Remove the shrimp to a hot serving dish and keep warm. Add the butter and lemon juice to the baking dish and return to the oven for two to three minutes. Remove as soon as the butter is hot and pour over the shrimp.
