Italian Style Pepper Steak Recipe
Ingredients
| 2 medium green and/or red sweet peppers, cut into thin strips | ||
| Onion | 1/2 Cup (16 tbs), chopped | |
| Garlic | 2 Clove (5gm), minced | |
| Cooking oil | 1 Tablespoon | |
| 12 ounces beef tenderloin or boneless top sirloin steak, cut 3/4 inch thick | ||
| Beef broth | 3/4 Cup (16 tbs) | |
| Rosemary | 1 1/2 Teaspoon, crushed | |
| Tomatoes | 2 Medium | |
Directions
In a large skillet cook sweet peppers, onion, and garlic in hot oil about 4 minutes or until vegetables are crisp-tender.
Remove from skillet.
Cover and keep warm.
Trim fat from steak.
Cut steak into 4 serving-size portions.
Add steak to skillet (add more oil if necessary during cooking).
Sprinkle steak with salt.
Cook over medium-high heat for 6 to 8 minutes or until medium (160°), turning once.
Transfer to a serving platter, reserving drippings in skillet.
Cover and keep warm.
Carefully add beef broth and snipped fresh or dried herb to reserved drippings in skillet.
Bring to boiling.
Boil gently, uncovered, over medium heat for 2 to 3 minutes or until broth is reduced to 1/3 cup, scraping up any browned bits on bottom.
Remove from heat.
Stir the cooked vegetables and tomatoes into broth.
Heat through.
Serve the vegetable mixture over steak.
If desired, garnish with fresh herb sprigs.
