Italian Style Courgettes Zucchini Recipe
Ingredients
| Courgettes | 3 1/2 Cup (16 tbs), sliced | |
| Onion | 1 Small, chopped | |
| Garlic | 1 Clove (5gm), crushed | |
| 45 ml / 3 tbsp water | ||
| Canned tomatoes | 1 1/2 Cup (16 tbs), strained | |
| Ground black pepper | 1 To taste | |
| 45 ml / 3 tbsp grated Parmesan cheese | ||
| Salt | To Taste | |
Directions
Put the courgettes (zucchini) in a dish with the onion and garlic. Add the water. Cover with vented cling film (plastic wrap) and cook for about 7 minutes, until nearly done.
Stir in the sieved (strained) tomato and season with salt and pepper. Cover and cook for 2-3 minutes, until hot through.
Sprinkle with grated Parmesan cheese.
