Ingredients

 Courgettes3 1/2 Cup (16 tbs), sliced
 Onion1 Small, chopped
 Garlic1 Clove (5gm), crushed
 45 ml / 3 tbsp water
 Canned tomatoes1 1/2 Cup (16 tbs), strained
 Ground black pepper1 To taste
 45 ml / 3 tbsp grated Parmesan cheese
 Salt To Taste

Directions

Put the courgettes (zucchini) in a dish with the onion and garlic. Add the water. Cover with vented cling film (plastic wrap) and cook for about 7 minutes, until nearly done.
Stir in the sieved (strained) tomato and season with salt and pepper. Cover and cook for 2-3 minutes, until hot through.
Sprinkle with grated Parmesan cheese.
