Ingredients
2 tsp olive oil
2 small yellow onions, sliced in rings
2 celery stalks, thinly sliced
3 small unpeeled eggplants, cut in strips
3/4 lb. plum tomatoes, chopped
2 garlic cloves, sliced
1 tsp salt
1/2 tsp freshly ground black pepper
1 tsp basil
1/3 cup capers
10 pitted black olives
1 lemon, thinly sliced
1/4c. fresh parsley, finely snipped
Directions
Heat the olive oil in a nonstick skillet or wok.
Saute onions and celery just until limp.
Add eggplant and toss to coat with oil.
Add the tomatoes and garlic; cook for 2 minutes, stirring occasionally.
Season with salt, pepper, and basil.
Stir in the capers, olives, and lemon slices.
Cook, uncovered, for 1 minute; stir occasionally.
Spoon into a serving dish or bowl.
Cover and refrigerate for a day or two.
