Ingredients

 Garlic1 Clove (5gm)
 2 tablespoons olive or cooking oil
 Carrot1 , minced
 2 pounds lean pork, cut into bite-size pieces
 1 cup dry red or white wine
 Salt1 1/2 Teaspoon
 Pepper1/2 Teaspoon
 Celery2 1/2 Cup (16 tbs), sliced
 Bouillon or water
 Chopped tomatoes1 Cup (16 tbs), canned

Directions

Brown garlic in oil and discard garlic.
Add carrot, pork, wine, salt, and pepper.
Cook, covered, over low heat for 1 1/2 hours.
Cook celery in bouillon until almost tender; drain.
Add cooked celery and tomatoes to pork mixture for the last 15 minutes of cooking time.
