 1/4 Cup diced sweet red or green pepper
 Frozen green peas1/2 Cup (16 tbs)
 Red onion1/4 Cup (16 tbs), chopped
 Parsley1/4 Cup (16 tbs), chopped
 Cheese1/4 Cup (16 tbs), diced
 Cider vinegar3 Tablespoon
 2 Tbsp olive or vegetable oil
 Orange juice2 Tablespoon
 Light mayonnaise1 Tablespoon
 Thyme1/4 Teaspoon, dried
 Basil1/4 Teaspoon, dried
 Dried oregano1/4 Teaspoon
 Ground pepper1 To taste

Directions

In salad bowl, combine rice, carrots, celery, sweet pepper, peas, onion, parsley and cheese; set aside.
In small bowl, combine vinegar, oil, orange juice, mayonnaise, thyme, basil and oregano; mix well.
Pour over salad and toss to mix.
Season with pepper to taste.
