Italian Plum Cobbler Recipe
Ingredients
| 1 1/2 cups packaged biscuit mix | ||
| Sugar | 2 Tablespoon | |
| Butter/Margarine | 2 Tablespoon, melted | |
| 1 1/2 pounds Italian plums, pitted and quartered | ||
| Sugar | 1 1/4 Cup (16 tbs) | |
| Water | 1/4 Cup (16 tbs) | |
| Quick-cooking tapioca | 2 Tablespoon | |
| Butter/Margarine | 2 Tablespoon | |
| Milk | 1/2 Cup (16 tbs) | |
Directions
Combine biscuit mix, 2 tablespoons sugar, and melted butter; set aside.
Combine plums, 1 1/4 cups sugar, water, and tapioca.
Cook over medium heat, stirring constantly, till mixture boils; stir in the 2 tablespoons butter.
Pour into 8x8x2-inch pan.
Add enough milk to dry ingredients to moisten; drop by spoonfuls on top of hot plum mixture; spread atop.
Bake in hot oven (425°) for 20 minutes or till done.
