Ingredients
2 Lbs. Green Peppers, cut into 1/2 wide strips
12 Cloves Garlic, minced
2 Tbs. Fresh Mint Leaves
6 Tbs. Oil
2 Tsp. Cider Vinegar
Salt to taste
Directions
Heat half of the oil in a large, cast-iron or heavy pan at medium-high heat.
Add half of peppers and keep moving at all times until all bright green color is gone, but peppers are not soft.
Turn into large bowl and add half of garlic, half of mint, half of vinegar and salt to taste.
Mix well and spoon into clean jars.
Repeat same steps for second half of peppers; refrigerate.
Will keep for 2 or 3 months.
This is a delicacy with fried egg sandwich, or any other kind of sandwich.
