Italian Parfaits Recipe
Ingredients
| Instant espresso powder | 2 Teaspoon | |
| Boiling water | 1/2 Cup (16 tbs) | |
| 8 nonfat chocolate chip biscotti, crushed | ||
| 2 2/3 cups nonfat vanilla frozen yogurt | ||
| Semi-sweet chocolate | 4 Teaspoon, grated | |
Directions
In a small bowl, dissolve the espresso powder in the water.
Set aside to cool.
Divide one-third of the biscotti crumbs among 4 parfait glasses.
In each glass, layer 1/3 cup of the frozen yogurt, 1 tablespoon of the espresso, and 1/2 teaspoon of the chocolate.
Repeat.
Top with the remaining biscotti crumbs and the remaining chocolate.
Set aside to cool.
