Ingredients

 Italian bread2 Cup (16 tbs)
 2 large ripe tomatoes, about 1 pound, cut into 1-inch cubes
 1 small cucumber, peeled, seeded, and cut into 3/4-inch cubes
 Red onion1/2 Cup (16 tbs), finley diced
 Garlic1 Clove (5gm), minced
 Extra virgin olive oil1/2 Cup (16 tbs)
 Red wine vinegar1/2 Cup (16 tbs)
 Dried oregano1 Tablespoon, chopped
 Salt1 Teaspoon
 Pepper1/2 Teaspoon

Directions

1. In a large bowl, combine bread, tomatoes, cucumbers, and onion.
2. In a small bowl, combine garlic, olive oil, vinegar, oregano, salt, and pepper. Beat with a fork to blend. Pour half the dressing over tomato combination and toss together. Gradually add remaining dressing, tossing to season bread. Use only as much as needed. Allow to stand for about 15 minutes and toss again.
