Italian Bread And Tomato Salad Recipe
Ingredients
| Italian bread | 2 Cup (16 tbs) | |
| 2 large ripe tomatoes, about 1 pound, cut into 1-inch cubes | ||
| 1 small cucumber, peeled, seeded, and cut into 3/4-inch cubes | ||
| Red onion | 1/2 Cup (16 tbs), finley diced | |
| Garlic | 1 Clove (5gm), minced | |
| Extra virgin olive oil | 1/2 Cup (16 tbs) | |
| Red wine vinegar | 1/2 Cup (16 tbs) | |
| Dried oregano | 1 Tablespoon, chopped | |
| Salt | 1 Teaspoon | |
| Pepper | 1/2 Teaspoon | |
Directions
1. In a large bowl, combine bread, tomatoes, cucumbers, and onion.
2. In a small bowl, combine garlic, olive oil, vinegar, oregano, salt, and pepper. Beat with a fork to blend. Pour half the dressing over tomato combination and toss together. Gradually add remaining dressing, tossing to season bread. Use only as much as needed. Allow to stand for about 15 minutes and toss again.
