1 1/2 pounds ripe plum tomatoes, cored and cut into 1/2 inch cubes
1 small cucumber, peeled, halved lengthwise, seeded, and cut into 1/2 inch cubes
1/2 small red onion, sliced thin 3 tablespoons balsamic or red wine vinegar
2 teaspoons olive oil
2 cloves garlic, bruised
3 slices stale crusty bread, each 1 inch thick and cut into 1 inch squares
2 tablespoons minced fresh basil or 1 teaspoon dried basil, crumbled
Directions
Place the tomatoes, cucumber, and onion in a large bowl, sprinkle with the vinegar and olive oil, and toss well to mix.

Cover and chill in the refrigerator for 2 hours.
