Islander Sticks Recipe
Ingredients
| 2 lbs. boneless pork, cut in strips | ||
| 12 metal skewers | ||
| 2 firm bananas, peeled and sliced thickly | ||
| Coconut | 1/2 Cup (16 tbs), desiccated | |
| Juice of 1 lime | ||
| MARINADE | ||
| Soy sauce | 1 Cup (16 tbs) | |
| Firmly packed brown sugar | 1/2 Cup (16 tbs) | |
| Garlic | 2 Clove (5gm), crushed | |
| 1 tbsp. grated fresh ginger root | ||
| 12/4 cup medium dry sherry | ||
| Cold water | 1/4 Cup (16 tbs) | |
Directions
Lay pork strips in a single layer in a shallow ceramic or glass dish.
Mix marinade ingredients together and pour over the pork.
Cover and marinate for at least 30 minutes, turning meat once.
Drain pork, reserving marinade.
Weave meat strips on metal skewers, allowing space at the end of each skewer for banana pieces.
Dip banana slices in reserved marinade.
Roll in desiccated coconut and sprinkle with lime juice.
Place 1 or 2 banana slices on the end of each skewer.
Brush skewered ingredients with more marinade.
Grill for about 10 to 15 minutes over medium-hot coals, or until meat is cooked through.
