Islander Fish Filets Recipe
Ingredients
| 1 pound orange roughy filets or other mild white fish | ||
| 1/2 cup plain nonfat yogurt | ||
| 2 tablespoons frozen orange juice concentrate | ||
| Lemon juice | 1 Tablespoon | |
| 2 teaspoons fruit juice sweetened orange marmalade | ||
| Banana | 1/3 Cup (16 tbs), mashed | |
| Garlic powder | 1/8 Teaspoon | |
| 1/8 teaspoon ground ginger or 1/4 teaspoon fresh grated | ||
| Pepper white | 1 Pinch | |
Directions
GETTING READY
1) Set the oven temperature to 400°F before baking.
2) Slice filets into 4 serving size pieces.
MAKING
3) In a large baking pan (enough to hold fish in one layer), place the sliced filets side by side.
4) Take a medium bowl and mix together remaining ingredients in it.
5) Spread evenly 1/2 cup of this sauce over each fish slice and bake for 5-15 minutes or longer in preheated oven until fish crumbles easily when tested with a fork.
SERVING
6) On a serving dish, place the baked fish and serve hot with remaining sauce.
