Island Style Fried Grouper Recipe

2 1b grouper steaks or fillets 1 kg
 
3/4 cup lemon juice (3 lemons) 175 mL
 
1 hot chili or scotch bonnet pepper, seeded and finely chopped 1
 
2 eggs 2
 
1/2 cup light cream (18%) 125 mL
 
1/4 tsp each salt and pepper 1 mL
 
1 cup (approx.) all purpose flour 250 mL
 
vegetable oil
 
lime or lemon wedges

Directions

Cut fish into 4 by 1/2 in (10 x 1 cm) strips.
In large shallow nonmetallic dish, arrange fish in single layer.
In small bowl, combine lemon juice and hot pepper; pour lemon juice mixture evenly over fish.
Let stand 15 minutes, In separate shallow dish, beat together eggs, cream, salt and pepper.
Sift flour onto dinner plate.
Remove fish from marinade, shaking off excess.
Dip fish in egg mixture to coat evenly, then coat evenly in flour; set aside.
In large skillet, heat 1/4 in (5 mm) depth of oil over high heat.
Fry fish in batches 7 to 10 minutes, turning once, until coating is golden brown and crisp and fish flakes easily with a fork.
Drain on paper towels; keep warm, uncovered, in warm oven until all fish is fried.
Garnish with lime or lemon wedges.
