Island Chicken Recipe
Ingredients
2 1/2 to 3 lbs. chicken pieces
1 cup water
1/3 cup soy sauce
2 tablespoons dry sherry or lemon juice
1 teaspoon ground ginger
1 clove garlic, minced
1 can (1 lb., 4 oz.) crushed pineapple, undrained
1 can (11 oz.) mandarin oranges, undrained
1 jar (6 oz.) maraschino cherries, undrained
1 tablespoon water
1 tablespoon cornstarch
1/2 cup seedless raisins
Shredded or toasted coconut, if desired
Directions
Arrange chicken pieces in a 13x9x2 inch glass baking dish.
Mix together water, soy sauce, sherry, ginger and garlic.
Pour marinade over chicken pieces.
Cover and marinate overnight in the refrigerator.
Drain fruits and reserve liquid.
Blend water and cornstarch together in a 4-cup glass measuring cup.
Stir in reserved fruit juice.
Microwave 3 to 5 minutes or until thickened.
Stir every minute.
Stir in raisins.
Drain marinated chicken.
Cover chicken with plastic wrap.
Microwave 10 minutes, giving dish a 1/2 turn during cooking.
Arrange fruits over chicken and pour sauce over top of fruit.
Replace plastic cover and continue cooking 15 to 18 minutes.
Give dish a 1/2 turn during cooking.
