Island Sweet Sour Pork Recipe
Ingredients
| 1 1/2 pounds boneless pork shoulder, cut in small cubes | ||
| Cooking oil | 1 Tablespoon | |
| Salt | 1 Teaspoon | |
| Pepper | 1 Dash | |
| Pineapple tidbits | 1 8 1/2 Ounce | |
| Bottled barbecue sauce | 1/2 Cup (16 tbs) | |
| Quick-cooking tapioca | 1 Tablespoon | |
| 1 medium green pepper, cut in strips | ||
| Hot cooked rice | ||
Directions
In medium skillet brown the pork in hot cooking oil.
Season meat with salt and pepper.
Drain the pineapple, reserving the pineapple syrup.
Add water to the syrup to make 3/4 cup liquid.
Stir the syrup, barbecue sauce, and tapioca into the browned meat.
Cover the skillet and simmer till meat is tender, about 45 minutes.
Add the drained pineapple and green pepper strips; heat the mixture thoroughly.
Serve the pork mixture over hot cooked rice.
