Island Spareribs Recipe
Ingredients
| Soy sauce | 1/2 Cup (16 tbs) | |
| Catsup | 1/2 Cup (16 tbs) | |
| Brown sugar | 3 Tablespoon | |
| 1 egg-size ginger root, grated | ||
| Monosodium glutamate | 1 Teaspoon | |
| 3 sides (about 3 pounds) small, meaty pork spareribs | ||
| Sugar | 1/4 Cup (16 tbs) | |
| Salt | 1 Teaspoon | |
Directions
Mix first five ingredients for Island Barbecue Sauce.
Let stand overnight.
Rub spareribs on both sides with sugar and salt; let stand 2 hours.
Brush with Island Barbecue Sauce; let stand at least an hour.
Barbecue or hang in Chinese barbecue oven about an hour.
Or, barbecue in range oven: Place meat side up, on rack in shallow pan; bake in very hot oven (450°) 15 minutes: pour off fat.
Continue baking in moderate oven (350°) 1 hour or till done, turning ribs and brushing with barbecue sauce a few times.
Cut in pieces.
