Island Papaya Cocktail Recipe
Ingredients
Juice of 2 limes
3 cups papaya, diced or balls
1 tbs. sugar
1 tbs. butter
3 tbs. mayonnaise
1 tbs. catsup
1 tsp. grated onion
Directions
Marinate papaya for 30 minutes in lime juice in refrigerator.
Carmelize sugar in saucepan.
Combine the remaining ingredients except papaya and lime juice, and gradually add to sugar.
Cook mixture over low heat until well blended.
Place chilled papaya in cocktail glasses and top with a spoonful of cooled sauce.
Garnish with a few of the papaya seeds and serve.
