Irish Raisin Soda Bread Recipe Video

Super easy take on Irish Soda bread, studded with raisins and really good. I like this sliced thick, toasted and slathered with sweet Irish butter

Ingredients

 
4 cups flour
 
1/4 cup sugar
 
1 Tbs baking powder
 
1 tsp baking soda
 
1/4 tsp salt
 
1/2 cup unsalted butter, softened
 
1 cup buttermilk
 
1 egg
 
1/2 cup raisins plumped in 1/2 cup hot water and drained
 
for wash:
 
1/4 cup melted butter
 
1/4 cup buttermilk

Directions

Combine dry ingredients, add butter and cut in, add 1 cup
buttermilk and egg and mix to combine. Stir in rasins. Gather dough into a ball and
shape into a loaf and place on a greased baking
pan. Using a sharp knife, cut an X into top of dough. Baste with a mixture of wash ingredients
prior to baking in a preheated 375 F oven and then baste every 20 mins or so. Bake for 40-50
mins or until loaf is browned, bottom is browned and a toothpick inserted into center comes out clean.
Cool on a wire rack.e
