Ingredients
1/2 lb butter
1/2 lb sugar
9oz flour
4 large eggs
Half of a lemon peel, grated
1/4 tsp of baking powder
1/2 lb sultananas
1/2 lb cuurants
2oz red cherries
2oz chopped almonds
2tbsp of Irish whiskey
Directions
Mix 1 egg and the sugar in a bowl and then add the lemon peel
add the remaining eggs, mixing very well
sieve the baking powder and the flour into the mixture and add fruit
mix well
transfer the mix into a cake pan coated in butter
garnish the top with chopped almonds
Bake for 2 1/2 hours in moderate oven heat about 250 to 300
when cooked the cake will pull away from the sides of the pan
remove from oven and coat the top with whiskey
leave to cool completely befor serving
