Irish Jam Microwave Muffins Recipe

Ingredients
3/4 Cup Flour
3/4 Tsp. Baking Powder
1/4 Tsp. Soda
1/2 Tsp. Grated Lemon Rind
2 Tbsp. Sugar
1 Egg
1/3 Cup Buttermilk
3 Tbsp. Cooking Oil
1/4 Tsp. Lemon Extract Raspberry or Blueberry Jam Confectioner'S Sugar Cinnamon
Directions
Mix together flour, baking powder, soda, grated lemon rind and sugar.
In another bowl, whisk egg with buttermilk, oil and lemon extract.
Quickly combine with dry ingredients, stirring lightly.
Place one tablespoon batter into paper-lined microwave muffin pan.
Then add one tablespoon jam and cover with batter.
Bake on high 21/2 to 4 minutes until done.
Gently remove from pan and cool on wire rack, dusting tops with confectioner's sugar and cinnamon.
