Irish Tomato Soup Recipe
Ingredients
| Unsalted butter | 4 Tablespoon | |
| Yellow onions | 1 , chopped | |
| Carrot | 1 Small, chopped | |
| Potatoes- 2 medium-sized, peeled and chopped | ||
| Chicken broth | 1 Can (10oz) | |
| Plum Tomatoes- 7-8 ripe | ||
| Basil leaves | 1 1/2 Tablespoon | |
| Salt | 1 To taste | |
| Pepper | 1 To taste | |
| Low-Fat Milk- 2 cups | ||
Directions
GETTING READY
1) In a pot, melt butter and sauté onions and carrot.
2) Simmer and cook the carrot mixture for 5 minutes.
3) Stir in the potatoes and mix briefly.
4) Stream in the chicken broth.
MAKING
5) In a saucepan of boiling water blanch tomatoes for 30 seconds.
6) Using a slotted spoon remove the tomatoes from water.
7) Allow to cool slightly, and peel and discard skin.
8) Add the peeled tomatoes to he carrot mixture.
9) Allow the tomato mixture to simmer for1 hour.
10) Stir in the basil, salt, pepper, and milk.
11) Heat the tomato soup for 5 minutes.
12) Remove the pot off the heat.
SERVING
13) Serve hot garnished with chopped parsley if desired.
