Irish Stew Recipe
Ingredients
| 2 lbs. boneless lamb, cut in 1" cubes | ||
| 2 medium carrots, sliced in 1/4" pieces | ||
| 2 potatoes (6 oz. each), peeled and cubed | ||
| Hot water | 2 1/2 Cup (16 tbs), divided | |
| Onion envelope | 1 | |
| Bay Leaf | 1 | |
| Flour | 1/4 Cup (16 tbs) | |
Directions
Into a 4-quart casserole, arrange lamb, carrots and potatoes forming 3 separate layers.
In a bowl combine 2 cups hot water, soup mix and bay leaf.
Stir together until well blended.
Pour mixture over potatoes.
Cover with lid.
Cook on HIGH 10 minutes and on LOW 75 minutes.
Blend flour with remaining 1/2 cup water till smooth.
Stir into dish.
Cook on HIGH 4-5 minutes or until stew is thickened.
P.S.: 1/4 teaspoon of browning sauce may be added.
