Irish Stew Recipe

2 1/2 lb best end of neck
2 lb potatoes
3 large onions
2 carrots
Chopped parsley
Pepper and salt
Directions
Peel the potatoes and slice them thinly.
Put a layer at the bottom of a deep stew pan.
Now put a layer of trimmed neck, cut into chops, upon the potatoes, then a layer of chopped onions and carrots.
Continue with these layers until all is used up.
Season with pepper and salt.
Pour in enough stock or water to come about a third or halfway up the saucepan.
Bring to the boil, and then simmer gently for about 2 hours.
The stew should be quite thick.
Pile it on a hot dish and sprinkle generously with chopped parsley.
