Irish Soda Scones Recipe
Ingredients
| Whole wheat flour | 1 1/4 Cup (16 tbs) | |
| All purpose flour | 3/4 Cup (16 tbs) | |
| 1/2 cup quick-cooking rolled oats | ||
| Brown sugar | 3 Tablespoon | |
| Baking soda | 1/4 Teaspoon | |
| Butter/Margarine | 1/4 Cup (16 tbs) | |
| 1/2 cup chopped raisins or pitted dates | ||
| Buttermilk | 1 Cup (16 tbs) | |
| 1 tbsp. buttermilk or milk | ||
| Brown sugar | 2 Tablespoon | |
Directions
1. Lightly grease a baking sheet; set aside. In a mixing bowl combine flours, oats, 3 tablespoons brown sugar, soda, and 1/4 teaspoon salt. Using a pastry blender, cut in butter till mixture resembles coarse crumbs. Stir in raisins. Add the 1 cup buttermilk; stir just till moistened.
2. Turn dough out onto a lightly floured surface. Quickly knead 10 to 12 strokes or till nearly smooth. On the prepared baking sheet, pat dough into a 7-inch circle, 1 inch thick. Cut into 8 wedges; separate wedges slightly. Brush with 1 tablespoon buttermilk and sprinkle with the 2 tablespoons brown sugar. Bake in a 400° oven about 20 minutes or till edges are golden. Remove from baking sheet; cool slightly.
