Irish Soda Bread Recipe

Ingredients
2 cups whole wheat flour
2 cups unbleached flour
1/3 cup light brown sugar
2 teaspoons baking soda
2 teaspoons baking powder
1 cup dark raisins or currants
2 egg whites
1 1/3 cups nonfat buttermilk
Skim milk
Directions
1. Combine the flours, brown sugar, baking soda, and baking powder in a large bowl, and stir to mix well, pressing out any lumps with the back of a spoon. Stir in the raisins or currants. Add the egg whites and just enough of the buttermilk to form a stiff dough, and stir just until the dry ingredients are moistened.
2. Turn the dough onto a floured surface, and shape into a 7-inch circle. Coat a 9-inch round pan with cooking spray, and place the dough in the center of the pan. Brush the top lightly with milk, and use a sharp knife to cut a 1/2-inch-deep X in the top.
3. Bake at 350 °F for 35 to 40 minutes, or just until a wooden toothpick inserted in the center of the loaf comes out clean.
