Low Fat Irish Soda Bread Recipe
This irish soda bread is a mixed flour bread made with wheat and regular flour. Combined with raisins and buttermilk for moisture, the soda bread batter is oven baked with added baking agents.
Ingredients
2 cups sifted all purpose flour
2 cups unsifted whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup golden raisins, chopped
2 teaspoons caraway seeds
1 1/4 to 1 1/2 cups buttermilk
Nonstick cooking spray
Directions
Preheat the oven to 375°F.
In a large bowl, combine the all purpose flour, whole wheat flour, baking powder, baking soda, and salt.
Stir in the raisins and caraway seeds.
Add enough buttermilk to make a dough that is firm but not dry.
Turn the dough out onto a lightly floured surface and knead until it is smooth 2 to 3 minutes.
Shape the dough into a round loaf and, using a sharp knife, slash a large X 1/4 inch deep across the top.
Coat a baking sheet with the cooking spray, place the loaf on it, and bake for 35 to 40 minutes or until the bottom of the loaf sounds hollow when tapped.
