Sugarless Irish Soda Bread Recipe
Ingredients
| All purpose flour | 1 Cup (16 tbs) | |
| Baking soda | 2 Teaspoon | |
| Salt | 1 1/2 Teaspoon | |
| Shortening/Margarine | 1/4 Cup (16 tbs) | |
| Whole wheat flour | 3 Cup (16 tbs), unsifted | |
| 1 2/3 cups buttermilk or sour milk | ||
Directions
Preheat oven to 400° F.
Sift all-purpose flour, soda, and salt together into a large bowl.
With a pastry blender cut in shortening until the texture of coarse meal.
Mix in whole wheat flour.
Pour in buttermilk all at once and mix well to blend (you may have to use your hands).
Turn out on a lightly floured board and knead until fairly smooth, about 5 minutes.
Shape into a round loaf about 6" across, with a sharp knife cut a cross 1/4" deep in top and sprinkle with a very little flour.
Place cross side up in a well-greased round 2-quart casserole about 2 1/2" deep.
Bake, uncovered, about 40 minutes until crusty brown and hollow sounding when tapped.
Turn loaf out on wire rack and cool before cutting.
