Irish Soda Bread Recipe

Lightly spray a cookie sheet with vegetable oil.
In a large bowl, sift together the first six dry ingredients.
Cut in margarine with a pastry blender until mixture resembles cornmeal.
Add buttermilk and stir only until moistened.
Mix currants in lightly.
Shape into a ball and knead about 15 seconds.
Place dough on prepared cookie sheet.
With the palm of the hand, flatten dough into a circle about 7 inches in diameter and 1 1/2 inches thick.
With a sharp knife, cut a cross on the top about 1/4 inch deep and 5 inches long, to prevent cracking during baking.
Bake 45 to 50 minutes.
Cool on a wire rack.
