Ingredients
| All purpose flour | 4 Cup (16 tbs) | |
| Sugar | 3 Tablespoon | |
| 1 1/2 tablespoons low sodium baking powder | ||
| Baking soda | 1 Teaspoon | |
| 6 tablespoons unsalted margarine or butter, cold | ||
| Golden Raisins | 1 Cup (16 tbs) | |
| 6 slices ARMOUR® Lower Salt Bacon, cooked crisp and crumbled | ||
| Eggs | 2 | |
| Buttermilk | 1 1/2 Cup (16 tbs) | |
Directions
Preheat oven to 375°F.
Combine flour, sugar, baking powder and baking soda in large bowl; cut in cold margarine until mixture resembles coarse crumbs.
Stir in raisins and bacon.
Beat eggs slighdy in small bowl; reserve 1 tablespoon egg.
Add buttermilk and remaining eggs to flour mixture; stir to make soft dough.
Turn out onto lighdy floured surface; knead 1 to 2 minutes or until smooth.
Shape dough into round loaf.
Spray round 2-quart casserole dish with nonstick cooking spray; place dough in dish.
With floured knife, cut a 4-inch cross about 1/4 inch deep on top of loaf.
Brush loaf with reserved egg.
Bake 55 to 65 minutes or until wooden toothpick inserted in center comes out clean.
