Irish Coffee Parfait Recipe
Ingredients
| 2 envelopes unflavored gelatin | ||
| Coffee | 1/2 Cup (16 tbs) | |
| 3 1/2 cups boiling, strong-brewed coffee | ||
| Irish whiskey | 1/3 Cup (16 tbs) | |
| Heavy cream | 1 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
Directions
1. Combine gelatin and the 1/2 cup sugar in a medium-size bowl. Stir in boiling coffee until sugar and gelatin dissolve. Stir in the Irish whiskey.
2. Chill until gelatin is as thick as unbeaten egg white. Pour gelatin mixture into 8 parfait or dessert glasses. Chill 2 hours, or until gelatin is firm.
3. Beat cream and 2 tablespoons sugar until stiff in a small bowl. Spoon cream on top of coffee gelatin.
