Irish Beef Stew Recipe
Ingredients
| 700 g/1 lb 9 oz chuck steak or braising steak, cut into 6-7cm chunks | ||
| Seasoned flour, for dusting | ||
| Oil | 2 Tablespoon | |
| 1 onion, roughly chopped | ||
| Carrots | 3 , cut in to chunks | |
| Potatoes | 2 , cut in to chunks | |
| 425 ml/3/4pt beef stock | ||
| 1 tbsp finely chopped parsley and chives | ||
Directions
MAKING
1. Toss the beef in seasoned flour and shake off any excess flour.
2. In a large pan, heat oil
3. Fry the beef in batches until brown all over.
4. Set aside in a plate
5. To the same frying pan, add onions and cook for 3 minutes.
6. Add potatoes and carrots and cook for 3 minutes more.
7. Add the beef to the simmering pan, pour over the stock and season with salt and pepper
8. Bring to the boil and then turn down the heat.
9. Simmer covered for 1 1/2-2 hrs or until the beef is tender.
SERVING
10. Sprinkle with herbs and serve hot.
