 4 eggs, lightly beaten

 2 tsp. sake or dry sherry

 4 oz. frozen shelled shrimp
 Frozen green peas1 Cup (16 tbs)
 3 dried mushrooms, soaked in cold water for 30 minutes, drained and sliced

Directions

Beat the eggs, dashi, sugar, soy sauce, sake or sherry and monosodium glutamate to taste together until they are thoroughly blended.
Set aside.
Heat the oil in a large frying-pan.
When it is hot, add the shrimps, peas and mushrooms and stir-fry for 3 to 4 minutes, or until the shrimps and peas are cooked through.
Stir in the eggs and reduce the heat to moderately low.
Cook the mixture, stirring the eggs from time to time to 'scramble' them, until the egg mixture has just lightly set.
Transfer the mixture to a warmed serving plate and serve at once.
