Irene S Cheese and Spinach Pie Recipe
Ingredients
| 1 tablespoon margarine or vegetable oil | ||
| Mushrooms | 1/4 pound, sliced | |
| Zucchini | 1 Small, thinly sliced | |
| Green pepper | 1 , diced | |
| Ham | 1 Cup (16 tbs), diced | |
| Cottage cheese ricotta | 1 pound, drained | |
| Mozzarella | 1 Cup (16 tbs), grated | |
| 3 eggs, lightly beaten | ||
| 1/2 cup cooked, drained, and chopped spinach | ||
| Dill | 1 Tablespoon, diced | |
| Salt | To Taste | |
| black pepper | 1 | |
| Butter/Margarine | 1 Tablespoon, melted | |
Directions
Saute mushrooms, zucchini, and green pepper in margarine for 5 minutes or until vegetables are soft.
Add ham and saute 2 minutes more or until all moisture is evaporated.
Cool.
Preheat oven to 350°.
Combine cottage cheese with mozzarella, eggs, and spinach.
Finally, beat in ham mixture and dill.
Season to taste.
Pour mixture into an oiled pie plate or casserole dish which will hold about 1 1/2 quarts.
Sprinkle with melted butter and bake 45 minutes or until set.
Add ham and saute 2 minutes more or until all moisture is evaporated.
