Iowa Crunch Microwave Muffins Recipe

Ingredients
Topping:
11/2Tbsp. Peanut Butter
2 Tbsp. Sugar
1 Tbsp. Flour
Pinch Salt
3/4 Cup Flour
3/4 Tsp. Baking Powder
1/4 Tsp. Soda
2 Tbsp. Sugar
1 Egg
1/3 Cup Buttermilk
3Tbsp. Cooking Oil
Directions
Mix together topping ingredients well with a fork.
Set aside.
Combine flour, baking powder, soda and sugar.
In another bowl, whisk egg with buttermilk and oil.
Combine with dry ingredients, stirring lightly and quickly.
Spoon into paper-lined microwave muffin cups.
Sprinkle on topping.
Bake on high for 21/2 to 4 minutes until done, stopping oven and rotating pan every minute.
Gently remove muffins from pan and cool on wire rack for five minutes.
Bake on high 21/2 to 4 minutes
