Iowa Chocolate Cake Recipe
Ingredients
2 Cups all purpose flour
1 1/2 cups sugar
2/3 cup cocoa powder (not a mix)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 Cup vegetable shortening
2 eggs
2/3 cup milk
1/2 cup hot water
1 teaspoon vanilla
Rich Fudge Frosting
Directions
1. Sift flour, sugar, cocoa, baking powder, baking soda and salt into the large bowl of an electric mixer.
2. Add shortening, eggs, milk, water and vanilla to bowl. Turn speed to low and beat 1 minute, scraping side of bowl several times.
3. Turn speed to medium and beat 3 minutes, or until batter is creamy and smooth. Pour into 2 greased and flouried 9-inch layer cake pans.
4. Bake in moderate oven (350°) 25 minutes, or until top springs back when lightly touched with fingertip. Cool in pans on wire racks 10 minutes; loosen around edges with a narrow spatula; invert onto wire racks; cool completely. Put together and frost
