1.In a skillet, dry roast the oats.
2.Let it cool and grind to a powder. Keep aside.
3.Dry roast the cracked wheat for 3 minutes until it gives out a nice aroma.
4.In a pan, pour the oil.
5.Temper with mustard seeds, green chilies and curry leaves.
6.Add the grated carrots and sauté for a few minutes.
7.In a large mixing bowl, add the roasted cracked wheat, oat flour and the tempered carrots.
8.Pour in the yogurt.
9.Season with salt and pour in the water.
10.Mix everything well to ensure that there are no lumps.
11.Add the baking powder and mix it in.
12.Pour into idli molds and steam for 15 minutes.
13. Serve hot with your choice of condiment.
The oats and cracked wheat mixture in this recipe can be roasted ahead of time in 2:1 ratio and stored for an instant version of idli.
