Ingredients

 Potatoes6 , halved
 Olive oil3 Ounce
 Sweet red peppers, sliced 2
 Green onions, chopped 1
 Garlic2 Clove (5gm), chopped
 Red wine vinegar2 Ounce
 Salt1/2 Teaspoon
 Pepper1 Pinch
 Mustard, mild or Dijon 1/4 tsp.
 Parsley2 Tablespoon, chopped

Directions

Cook potatoes in boiling salted water for 20 minutes, or until soft but still firm.
Remove, hold under cold water for a few minutes to stop cooking, and then let cool.
Heat some of the oil in a frying pan, and cook the red pepper, onion and garlic for 5 minutes, then place in a bowl.
Peel potatoes and cut into thick french fry shapes and add to the bowl.
Add the rest of the oil, vinegar, salt and pepper, and mustard.
Mix well and refrigerate for at least 1 hour before serving, then sprinkle with chopped parsley and serve immediately.
