Indonesian-Style Chicken Chowder Recipe
Ingredients
1 recipe Pick a Pasta Soup Mix
2 cups water
1 13 ounce can (12/3 cups) evaporated milk
3/4 cup diced cooked chicken or one
5 ounce can chunk style chicken, cut up
1 1/2 to 2 teaspoons curry powder
Apple slices (optional)
Fresh mint leaves (optional)
Directions
In a 2 quart saucepan combine the uncooked Pick a Pasta soup mix and the water.
Bring the mixture to boiling, then reduce the heat.
Cover and simmer about 35 minutes or till the lentils are tender, stirring the mixture occasionally during cooking.
Stir in the evaporated milk, diced cooked chicken or canned chunk style chicken, and the desired amount of curry powder.
Cover and cook the soup for 5 minutes more.
Ladle the soup into soup bowls.
If desired, garnish each serving with some apple slices and fresh mint leaves.
